About: My name is Kathy Ricketts. Cray Cray Cajun is my food trailer. Owning and operating a food trailer has always been a dream of mine. Two years ago I finally made that dream come true. Why Cajun? I spent many of years in Louisiana and absolutely love not only the people but the amazing food!! So I brought some of Louisiana to my home town. I serve authentic homemade Cajun dishes such as, Jambalaya (smoked sausage, chicken, shrimp with peppers and onions) over rice. Bourbon Chicken over rice, Cray Cray Balls (rice based, smoked sausage, chicken, shrimp with peppers and onions) egg bath, panko and deep fried which comes with a homemade Cajun dip, Crawfish Pistolettes (Pistolette bread is fried and then stuffed with a delicious, cheesy, crawfish mixture) and Cajun fries (sprinkled with a homemade Cajun seasoning).
